Wush Wush is a town located in the Keffa region in southern Ethiopia. This coffee is bought through a direct trade partnership with Homeland Organic Coffee estate.
Coffee is hand picked, after depulping it undergoes 12 to 16 hours fermentation in concrete tanks, before being rinsed in water channels and floaters removed.
The cherries are then dried on African beds, under shade, for one day then moved to full sun drying for next 7 to 10 days. They are covered during the hottest parts of the day to protect parchment from cracking but also during the night to protect from frost.
